Be realistic about what you hope your students will learn in the class. At best, two years from now students are going to remember just one or two things they learned from your class. Be intentional about what those one or two things are going to be. If your students forget everything else they learn in this class, what are the one or two things you want them to remember? Be clear to students what these aims are and make sure your goals and everything you do in the course supports those aims.
This may allow you to reduce the amount of content you need to deliver, and ensure that only activities relevant to your aims are included. This maximizes learning at a minimum of workload for both you and your learners.
